Hi,
Is it possible to configure the HUD in a way that the stats displayed changed automatically with the game conditions (for example preflop/ Postflop or IP /OOP)?

No - PokerTracker doesn't know anything about the progress of each hand as the information is read from the hand history file written after the hand finishes.
