Whether it is possible to create custom stats, showing EV winning in a certain situation for example, when me call 3bet preflop and when me see flop more 2 players ? (without use of filters in pt4)

I'm not certain exactly what you're looking for. You could create a stat that would display your equity per hand (or average equity over all hands) when you were all-in in a specific kind of situation, if that is what you want. Would you want this for reports or for the HUD?

in PT3 it is possible to make only the general prize by means of parameter "holdem_hand_player_statistics.amt_won", me need do this situation in PT4, but EV won

You want to use the database value cash_hand_player_statistics.amt_expected_won in that case.
