Is there a way to show my graph after x time? For ex today after 12pm
also a way to set wat time the day starts at?

You can change your My Day Starts At value in the Configure --> Reporting Options area.
For your graph the best thing might be to use the Summary report then choose to Group By Session. You can then use ctrl+click or shift+click to highlight multiple sessions and, if you choose the Graph button for the bottom section you'll see the graph of the highlighted sessions.
