I'm not sure exactly what stats you mean - there are stats for Probe Turn and Probe River built in. If those are not what you mean then please explain further what situations you're looking to count?

Thanks for the clarification. They are not built in, but can be made as custom stats, using these columns:
This is for the river - to make the turn version exchange _t_ for _f_ and _r_ for _t_ to move everything forward one street.

cnt_r_probe_def_action_fold =
sum(if[holdem_hand_player_statistics.flg_t_cbet_opp and lookup_actions_t.action = 'X' and holdem_hand_player_detail.amt_r_bet_facing > 0 and lookup_actions_r.action = 'F', 1, 0])

cnt_r_probe_def_opp =
sum(if[holdem_hand_player_statistics.flg_t_cbet_opp and lookup_actions_t.action = 'X' and holdem_hand_player_detail.amt_r_bet_facing > 0 and NOT holdem_hand_player_statistics.flg_r_check, 1, 0])

Then the Value Expression for the stat "Fold to River Probe" is:
(cnt_r_probe_def_action_fold / cnt_r_probe_def_opp) * 100

For a walkthrough of how to build a stat from expressions like these please see the Tutorial: Custom Reports and Statistics.
